Vellarikka Pachadi/Cucumber Curd Curry


Ingredients

  1. Sambar Cucumber – 1 small
  2. Green chilly – 2
  3. Water – 1/4 cup
  4. Yogurt/Thayir – 1 cup
  5. Salt  to taste

For Grinding

  1. Grated coconut – 1/2 cup
  2. Mustard Seeds – 1/2 tsp
  3. Green Chilies – 2 

For Seasoning

  1. Coconut oil/Vegetable oil – 1 tbsp
  2. Mustard seeds – 1/4 tsp
  3. Red chilly - 2 
  4. Curry leaves – a spring

Directions:

  • Grind together grated coconut, green chilly and mustard seeds with very little water to form a smooth paste
  • Peel the skin and remove the seeds form the Cucumber and chop it into small cubes
  • In a pan add cucumber, green chilly,salt and little water
  • Cover and cook on medium heat until the cucumber pieces are cooked well(Cooked till all water evaporated from the cucumber).
  • Add the ground coconut mixture to the cucumber and cook for 3-4 minutes. Add salt to taste.
  • Reduce heat and add beaten curd and mix well  and remove from fire
  • In another pan, heat 1 tbsp coconut oil/vegetable oil and splutter mustard seeds. 
  • Add curry leaves,Red chilly and saute for a minute. 
  • Pour the seasoning over the pachadi and mix well.
