Vendakka Thoran/Okra with Coconut /Vendakkai poriyal/Ladies finger with coconut
Ingredients
- Vendakka/Okra/Ladies Finger - 1 cup
- Grated coconut-1/2 cup
- Shallots/Chriya Ully/Small onion -10 (Cut into 4 pieces)
- OR onion -1/2 cup (cut into medium slices)
- Cumin Seeds/Jeera -1/4 tsp
- Curry Leaves -1 spring
- Red Chilly flakes -1/2 tsp (Optional)
- Green Chilly -2
- Oil -2 tbsp
- Salt to taste
Directions :
- Wash the ladies finger and drain all the water
- Cut top and bottom of the ladies finger and chop it into thin slices
- Cut the shallots into 4 pieces or onion into medium sized silces
- In a pan ,heat the oil and add cumin seeds.When it become brown add the ladies finger ,Curry leaves and stir occasionally(Reduce the heat into low flame)
- If its becoming sticky add 1/2 tsp of oil
- Cook for 3-5 minutes and add salt ,onion and mix well
- Add chilly flakes and mix well
- Cook covered for about 8-10 minutes in a low flame and stir in between
- Add grated coconut and mix well
- Then cook uncovered about 5 minutes ,stir occasionally
