Vendakka Thoran/Okra with Coconut /Vendakkai poriyal/Ladies finger with coconut



Ingredients

  1. Vendakka/Okra/Ladies Finger - 1 cup
  2. Grated coconut-1/2 cup
  3. Shallots/Chriya Ully/Small onion -10  (Cut into 4 pieces)
    1. OR onion -1/2 cup (cut into medium slices)
  4. Cumin Seeds/Jeera -1/4 tsp
  5. Curry Leaves -1 spring
  6. Red Chilly flakes -1/2 tsp (Optional)
  7. Green Chilly -2
  8. Oil -2 tbsp
  9. Salt to taste

Directions :

  • Wash the ladies finger and drain all the water
  • Cut top and bottom of the ladies finger and chop it into thin slices
  • Cut the shallots into 4 pieces or onion into medium sized silces
  • In a pan ,heat the oil and add cumin seeds.When it become brown add the ladies finger ,Curry leaves and stir occasionally(Reduce the heat into low flame)
  •  If its becoming sticky add 1/2 tsp of oil
  • Cook for 3-5 minutes and add salt ,onion and mix well 
  • Add chilly flakes and mix well
  • Cook covered for about 8-10 minutes in a low flame and stir in between
  • Add grated coconut and mix well
  • Then cook uncovered about 5 minutes ,stir occasionally
  • Serve with rice.
