Vendakka Thoran/Okra with Coconut /Vendakkai poriyal/Ladies finger with coconut
Ingredients
Vendakka/Okra/Ladies Finger - 1 cup
Grated coconut-1/2 cup
Shallots/Chriya Ully/Small onion -10 (Cut into 4 pieces)
OR onion -1/2 cup (cut into medium slices)
Cumin Seeds/Jeera -1/4 tsp
Curry Leaves -1 spring
Red Chilly flakes -1/2 tsp (Optional)
Green Chilly -2
Oil -2 tbsp
Salt to taste
Directions :
Wash the ladies finger and drain all the water
Cut top and bottom of the ladies finger and chop it into thin slices
Cut the shallots into 4 pieces or onion into medium sized silces
In a pan ,heat the oil and add cumin seeds.When it become brown add the ladies finger ,Curry leaves and stir occasionally(Reduce the heat into low flame)
If its becoming sticky add 1/2 tsp of oil
Cook for 3-5 minutes and add salt ,onion and mix well
Add chilly flakes and mix well
Cook covered for about 8-10 minutes in a low flame and stir in between
Add grated coconut and mix well
Then cook uncovered about 5 minutes ,stir occasionally
