Vegetable Manchurian
Ingredients :
For making Manchurian or vegetable balls :
- Grated Cauliflower - 1 cup
- Grated Cabbage - 1 cup
- Grated Carrot - 1 cup
- Grated Beans - 1cup
- Pepper powder -1/2 tsp
- All purpose flour / Maida - 4 tbs
- Corn flour or corn starch -2 tsp
- Garam masala - 1/4 tsp
- Salt to taste
For Sauce :
- Finely chopped onion - 1/2 cup
- Ginger julienne (Finely minced) -1/2 tbsp
- Garlic finely minced - 1/2 tbsp
- Green chilly finely chopped - 2
- Red chilly powder/red chilly sauce -1/2 tbsp
- Soya sauce -2 tbsp
- Tomato sauce/ketchup - 2 tbsp
- Spring onion greens finely chopped - 4 tbsp
- Garam masala -1/8 tsp
- Corn flour or corn starch -1 tsp
- Salt to taste
- Oil for frying and sauce
Directions for dry manchurian:
- In a bowl add all the ingredients for making the manchurian
- Don't squeeze the water from the vegetables
- Mix the ingredients without water ,press thoroughly to make thick mixture
- Make very small balls using the mixture (otherwise inside wont cook well)
- Heat the oil in the low-medium flame
- Place the balls carefully one by one in the hot oil
- Fry till the balls become golden brown
- Remove the balls from the oil and keep in a tissue paper
- Now heat a heavy bottom pan
- Add 2 tbsp oil
- Once the oil become hot add chopped onion,garlic,green chilly
- Add ginger once the onion become light brown
- After 2 minutes add red chilly powder,soya sauce,tomato sauce
- mix well and add 3/4 of chopped spring onion (remaining need for garnishing)
- Add salt
- Now add the vegetable balls
- Mix carefully
- In a small bowl mix Corn flour or corn starch -1 tsp and water 3 tbsp
- Pore this liquid on the vegetable balls and mix well
- Now the manchurian is ready,garnish with spring onion greens and serve hot!
Directions for manchurian gravy:
- Make the vegetable balls and fry
- While making the sauce add 1 1/2 water and bring to boil
- Add the corn flour water slowly
- Keep stirring till it turns to a thick gravy
- Add the fried balls and mix well
- Garnish with Spring Onion.
Tips: Add the balls to gravy at the time of serving ,otherwise crunchiness will go
