Vellarikka Pachadi/Cucumber Curd Curry
Ingredients
- Sambar Cucumber – 1 small
- Green chilly – 2
- Water – 1/4 cup
- Yogurt/Thayir – 1 cup
- Salt to taste
For Grinding
- Grated coconut – 1/2 cup
- Mustard Seeds – 1/2 tsp
- Green Chilies – 2
For Seasoning
- Coconut oil/Vegetable oil – 1 tbsp
- Mustard seeds – 1/4 tsp
- Red chilly - 2
- Curry leaves – a spring
Directions:
- Grind together grated coconut, green chilly and mustard seeds with very little water to form a smooth paste
- Peel the skin and remove the seeds form the Cucumber and chop it into small cubes
- In a pan add cucumber, green chilly,salt and little water
- Cover and cook on medium heat until the cucumber pieces are cooked well(Cooked till all water evaporated from the cucumber).
- Add the ground coconut mixture to the cucumber and cook for 3-4 minutes. Add salt to taste.
- Reduce heat and add beaten curd and mix well and remove from fire
- In another pan, heat 1 tbsp coconut oil/vegetable oil and splutter mustard seeds.
- Add curry leaves,Red chilly and saute for a minute.
- Pour the seasoning over the pachadi and mix well.
