Egg Curry/Nadan Mutta Curry/Kerala Egg Curry



Ingredients

    1. Boiled Egg - 2 
    2. Onion finely sliced -1 cup
    3. Tomato - 1/2 cup
    4. Green chilly - 2
    5. Chilly powder - 1  1/2 tsp
    6. Coriander powder - 1/2 tsp
    7. Pepper Powder - 1/2 tsp
    8. Turmeric powder - 1/4 tsp
    9. Curry Leaves - 1 spring
    10. Ginger paste-1/4 tsp
    11. Garlic sliced - 1/2 tsp
    12. Garam masala -1/4 tsp
    13. Mustard seeds -1/4 tsp
    14. Salt to taste
    15. Oil -2 tsp
    16. Coconut milk - 1/2 cup (Optional)

Directions :

  • Boil the eggs and sliced in to 4 pieces and keep aside
  • Heat the oil in a heavy bottom pan and add mustard seeds,when it pop up add onion,garlic,green chilly and curry leaves and stir occasionally
  • When the onion turns brown add tomato 
  • When the tomato cook nicely ,add ginger paste and salt
  • Cook till oil starts appearing , then add all masalas and cook for 2-3 minutes
  • Add enough water and cook till gravy become thick
  • Add boiled egg and cover it with the gravy and cook for 2 minutes
  • If more gravy is required add coconut milk
  • Garnish with curry leaves and tomato and serve hot!!!!
