Egg Curry/Nadan Mutta Curry/Kerala Egg Curry
Ingredients
- Boiled Egg - 2
- Onion finely sliced -1 cup
- Tomato - 1/2 cup
- Green chilly - 2
- Chilly powder - 1 1/2 tsp
- Coriander powder - 1/2 tsp
- Pepper Powder - 1/2 tsp
- Turmeric powder - 1/4 tsp
- Curry Leaves - 1 spring
- Ginger paste-1/4 tsp
- Garlic sliced - 1/2 tsp
- Garam masala -1/4 tsp
- Mustard seeds -1/4 tsp
- Salt to taste
- Oil -2 tsp
- Coconut milk - 1/2 cup (Optional)
Directions :
- Boil the eggs and sliced in to 4 pieces and keep aside
- Heat the oil in a heavy bottom pan and add mustard seeds,when it pop up add onion,garlic,green chilly and curry leaves and stir occasionally
- When the onion turns brown add tomato
- When the tomato cook nicely ,add ginger paste and salt
- Cook till oil starts appearing , then add all masalas and cook for 2-3 minutes
- Add enough water and cook till gravy become thick
- Add boiled egg and cover it with the gravy and cook for 2 minutes
- If more gravy is required add coconut milk
- Garnish with curry leaves and tomato and serve hot!!!!
