Sambar/sambhar

Ingredients

For Pressure Cook

  1. Toor dal -1 cup
  2. Tomato - 1/2 cup    
  3. Garlic - 3 cloves
  4. Onion -1/2 cup

For Gravy and Seasoning

  1. Vegetables (Okra,Beans,Carrot,Drum Stick etc ) - 1/4 kg (You can add any vegetables you like)
  2. Chilly powder- 1/2 tsp
  3. Coriander powder -1/2 tsp
  4. Turmeric powder -1/4 tsp
  5. Tamarind juice- 1/4 cup
  6. Sambar powder -2 tsp
  7. Asafoetida/Kayam -1/2 tsp   
  8. Oil -2 tsp
  9. Mustard seeds-1/2 tsp
  10. Fenugreek -1/4 tsp
  11. Curry Leaves -1 spring
  12. Cilantro /Coriander leaves - 3 tbs
  13. Onion -1/4 cup
  14. Tomato -1/4 cup
  15. Salt to taste

Directions 


  • Wash and cut the vegetables and keep it aside
  • Wash the toor dal and put it into pressure cooker and add Tomato,Garlic and onion and cook for about 3-4 whistles and keep it aside
  • Heat the oil in a pan and add Mustard seeds,when it splutter add fenugreek seeds ,Curry leaves and Red chilly 
  • Saute for 2 minutes
  • Add onion and cook till it became brown then add the tomato and cook well
  • Add all the spice powders and salt and mix well and cook for 2 minutes
  • Add the vegetables and mix well 
  • Add sufficient water and cook the vegetables nicely 
    • If you have microwave oven,then cook the vegetables in it for about 4 minutes with a very little water
  • When the vegetables are cooked well add the mashed toor dal into it 
  • Add tamarind juice and cook for about 6-8 minutes
  • Add  Asafoetida when it boils nicely 
  • Adjust the salt to your taste
  • Remove it from the fire and garnish with  Cilantro /Coriander leaves  
  • Serve with Rice,Dosa,Idly etc
